Why do we have to eat salads? Can't we just eat cookies and get healthy? Well, we can. Here is a yummy cookie recipe that has health fats, veggies, and no sugar added. Sounds too good to be true? Well, it is a reality. Here are the ingredients. Now you can make it without the veggies, but it still tastes great with the veggies, so you may as well have your salad with cookies :-)
2 cups almond flour
4 Tbsp soaked chia seeds
1 cup unsweetened or stevia-sweetened chocolate chips
1 cup peanut butter
3/4 cup monk fruit or stevia powder
2 cups cauliflower
1 cup spinach
24 grams protein powder (optional)
water if needed
You don't have to cook this. You just put the ingredients together and mix them. While you can use an egg beater, I find it less messy to do it by hand. Depending on how oily the peanut butter is, you may need to add water to help it blend, especially if you are not using any vegetables.
If you don't want to spend the time to shape it into a cookie, you can always just eat it as a cookie dough cake.
